Salicorne et Yaourt

300g de Salicorne
100ml de Yaourt grec
1 gousse d'ail écrasé
1 citron
Bring a large pot of water to a rolling boil. Mix yogurt with garlic and some lemon juice to taste.
Plunge the samphire into the boiling water and drain after one minute.

Salicorne à la vinaigrette aux arachides

2 cuillères à soupes d'huile de tournesol
Jus d'un citron
1 cuillère à soupe de sauce de soja
1 cuillère à café de sucre
Tabasco à gouter
2 cuillères à soupe de beurre d'arachide
100g de vermicelles de riz cuisiné
100g de salicorne
1 cuillère à soupe d'huile de tournesol
20g d'arachides hachées
10g de menthe fraîches ciselées
Mix the first six ingredients together to make a sauce with a whisk or hand blender.
Heat a frying pan with the oil, toss in the noodles & samphire frying for about 2 minutes before adding the dressing. Mix it together so it covers the noodles evenly
Divide onto plates and scatter mint and peanuts.

Samphire and Bacon

Serves 4

300g Baby potatoes cooked & sliced
100g Samphire
125g Bacon lardons
Fry the bacon over a medium high heat till golden in a heavy pan
Remove the bacon keeping the fat in the pan.
Now add the potatoes and fry until it is nice and brown.
Toss the bacon and samphire into the pan and fry for 2 minutes.
