Ireland, with the brand Wildway, has joined the small but elite circle of sea shore vegetable producers.
Wildway, between the benign commercial foraging and the commercial production, has successfully brought edible sea shore plants to ordinary Irish kitchens and Irish restaurants. The natural saltiness of these plants bring a new culinary prespective.

Marsh Samphire

Scientific name: Salicornia spp
Found in locations: Salt marshes and mud flats
Commonely known as Glasswort and found growing wild on parts of the Irish coastline near to another plant Rock samphire. Marsh samphire can be eaten raw or cooked.
The fleshy plant is roughly 20 cm heigh with scalelike leaves and small spikes. In our section culinary novelty, Wildway explores the new culinary aspects of a plant that was initially used in making glass.

Sea Purslane

Scientific name: Sesuvium portulacastrum.
Found in Locations: Salt marshes and coastal dunes.
Classified as herbaceous perennial, the plant can grow up to 30 cm high. The edible lanceolate shaped leaves are succulent and fleshy.
The plant can be found on the Irish coastline and recognisable by its thick reddish-green stems.

Sea Aster

Scientific name: Tripolium pannonicum.
Found in Locations: Salt marshes and rocky seashores.
It is a perennial herb that can grow up to 60 cm high. Similar to sea purslane, the leaves are lanceolate shaped.
